Chef Mohamed learned to cook these traditional dishes from his mom.

P.S.: That’s why it’s so important to pick up our mothers’ recipes. You might end up a famous chef someday because of them, who knows? The secret touch they lend to food is truly irreplaceable!

In addition, Chef Mohamed prepares all the spice blends himself. For the chicken recipe, he uses 7 types of spices and bakes it until well done. The beef curry is adjusted to suit local tastes, adding more flavour and excitement. More kick, more oomphh!

Chef Mohamed plans to introduce more complex dishes like maqluba, another famous traditional Palestinian dish. Fun fact: Maqluba gets its name, which means “upside down,” from the method of layering meat, rice, and fried vegetables in a pot, which is then flipped upside down when served.
